PãoBāo Bread is a Seattle based bakery specializing in Chinese & Portuguese inspired breads and pastries. Naturally leavened milk bread, pineapple buns, maple butter natas, char siu & chouriço bāo, all made by hand in small batches. We highlight ingredients that are local to Washington state like flour from Cairnspring Mills and meat from Olsen Farms. Our seasonal pastries are inspired by whatever is best that week at the farmers market.

the baker

Alison Shiu started PãoBāo Bread with a craving for flavors she grew up with and nowhere to find them. Growing up between Chinese bakery cases and Portuguese custard tarts, the breads that felt like home were soft, a little sweet, and always meant to be shared. That is the bread we set out to bake. Alison fell in love with bread making after attending the Institute of Culinary Education’s bread program and then working in Italian and French bakeries.

Everything is made by hand in small batches and given the time it asks for, some doughs two or three days. We bake with flour from regional mills and produce from the same markets we sell at. From milk bread to maple butter natas and everything in between, we look forward to sharing PãoBāo Bread with you.
